What, no meat rose?

 Yesterday, I had an awesome lunch. I was thinking that it wouldn't be filling, but I had a leadership meeting after school and no problem, I was good to go until I got home for dinner. Here's what it consisted of:

There were cherry tomatoes with a balsamic glaze, ritz crackers, hard salami, and this fresh mozzarella that was marinating in olive oil with a bunch of spices. (All this from Trader Joe's!) Only thing missing was some bread, but my stepmom and I had finished it all the night before.

Because it was so good, I posted the above pic in my Instagram stories (naturally). My sister, who had visited me in December thinks she's soooo clever with her reply that I didn't have a meat rose.


Are you familiar with this? I tried over Christmas to make one but I didn't not do enough research and it didn't turn out so well.

Pro tip: buy your meats for this project at the deli as regular cold cut size, the little ones just didn't do it.

#Arbonne30 completed and sustainable!

A few years ago (2012, damn, that was a long time ago!) I competed a Whole 30. This is a program that is a jump start to the Paleo lifestyle. It's an elimination diet. With this program you eliminate dairy, alcohol, grains, legumes, added sugar, Carrageen, Sulfites, and MSG, and "junk" food. What you eat on a Whole30 is veggies, fruit, unprocessed meats, seafood, eggs, nuts & seeds, (some) oils & ghee, and coffee. (Reference)

When I completed that program all those years ago, I lost 6 pounds. You can read about my month-end reflection at this link.

Since then I've tried many things, and most recently it was Arbonne's 30 Days to Healthy Living and Beyond. Our program is also an elimination diet for 30 days but our philosophy is a bit different. We eliminate all things that are acidic, allergenic, or addictive. These foods cause inflammation in our bodies, and lead to poor health and eventually disease. Arbonne's mission is to add health to our lives, and we do that by eating clean, whole foods, and supplementing them with products that support our bodies. More on that in a bit.

Before I dive in a bit more about Arbonne's philosophy and why I have such belief in it, I have to tell you that with Arbonne30, I lost 13.1 lbs in four weeks! That is double what I did in four weeks of the Whole30. DOUBLE. And that's just the scale victory. I had a lot of other non-scale victories, too, like:

  • No more cravings
  • Eating WAAAAYYY less, but never really feeling hungry
  • No head fog after too many carbs
  • No headaches from caffeine
  • Way more energy
  • Clear and glowing skin!
  • Clothes fit better (actually pulled out some old pants that hadn't fit in a while)
  • Happier - you guys, generally speaking, I'm a happy person, but the past few weeks I've been extra happy. It's kinda crazy!
So, what sets Arbonne apart? This image is a nice summary:

Arbonne is focused on a few things:
  1. Whole Foods Eating - we shop whole foods (think: 1 ingredient)  that are organic, cage-free, or grass fed
  2. Avoiding inflammatory, addictive, and triggering foods, specifically gluten, dairy, sugar, soy, caffeine, and alcohol, which trigger the immune system and cause inflammation

So, if you do not have enough bacteria to break down and absorb the nutrition you're eating, you're not getting the benefits of all that kale and raw nut butter and free range chicken! Additionally, serotonin, the feel-good hormone, is produced in our GI tract, and needs these enzymes to produce at good levels. Perhaps this is the reaosn for my excessive happiness? :-) :-)
  • Fizz Sticks - These replace pop and coffee (which are acidic, and sugared) but have so many benefits. They are a clean energy source and way more ALKALINE-forming. They taste awesome and have B Vitamins which help us out with stress. They contain chromium, which helps balance our blood sugar. WINNING!
And there are more, including Fiber Boost, Vegan Protein, and a 7 day cleanse.

But wait, there's more still. Our program offers a 30 day private facebook group that delivers education around everything we do, topics including: 
  • Gluten
  • Gut Health

The list goes ON and ON and ON.

That Facebook group is important for the education, but also the community. It's great to see people's results, have them cheer you on from the sidelines, and have a group to be there together when you are struggling, too!

At the end of the day, I'm not settling. I'm not settling for feeling or looking poorly, not settling for anything less than health and wellness, and from a business standpoint, I'm not settling on a teacher's salary that cannot deliver the things in my life that I want and need.


I share Arbonne because I BELIEVE in their philosophy and what they do, and I get that this company is a vehicle to financial and time freedom. 

So what did I learn in 30 days with Arbonne?

1. You can restrict the American Diet and not feel bad. You can go to a baby shower and have the veggies, salad, fruit salad, and meat minus bread, and still be happy. It's just food, not love. (Friends reference, anyone?) It's okay to let it go.

2. When the scale won't move and you've only "cheated" with a Lara Bar and some fruit, you better start counting your calories and make sure you've gotten enough so your body does not think it's going into starvation mode and store fats, rather than releasing them. My week four my scale was exactly the same as week three until the last day when I added more nutrition. The last day of the week? Down another 1.2 lbs!

3. When you do this kind of program, do so with a friend! There are currently three of us that work together, and we each make different recipes and swap them around for variety. We work together, cheer one another on, and are there to support one another. 

4. Yes you can! Yes you can complete this challenge and actually continue going. I'm planning on continuing for another four weeks, with one cheat meal around Fat Tuesday. With the education and recipes, this program is meant to take you beyond the 30 days, and you most certainly can.

5. It's affordable. Many people skoff at eating organic and grass fed, but if you spend your money there, prepare food at home, and use the supplements as they are meant to be (and in a pinch), it all comes out in the wash. You can afford this. (For perspective, I'm a single teacher living alone on the north side of chicago and I can afford it. You can too.)

6. It's not all just easy and rainbows and puppies. Anything worth doing takes discipline. You will need discipline, especially getting through the first week or two while you are detoxing yourself. The supports are put in place for your success with this program, and yes you can accomplish it. (Nod to my brother-in-law for reminding me of this and inspiring my One Word for 2018: Steadfast.)

7. Working out: In January I did eleven sessions of yoga. That's it. This challenge takes place in the kitchen and is focused the way we are nourishing our bodies, but the yoga? That's helpful too, for physical and emotional well being.

8. From a business standpoint: Lead by example. ALWAYS lead by example. People are talking to me about what I'm doing because they look at me and I look better and I'm happier. If you want your business to flourish, you have to get disciplined about your work.

(back to) workin on my fitness

I do better with my weight loss goals when I make them public, so here you all go. That was the original reason I started blogging and it totally helps and works, so I guess I'm back to my roots here on GGL.

We had a Biggest Loser in January until just now and I did not win. I did not win extra lbs either, but I didn't really try too hard. It was still cold out and I don't currently have a gym membership, so you can see how I really went no where. The only consistent change I made was that I started prepping chicken salads for lunch - and did that every day for three months. It's a lot of work on Sundays, but it's a good habit, and I always get veggies with this habit. I love my salads so it's not a big deal, but one friend at work feels like this about them:



Except you guys want to hear about my diet, right? :-)


I started using My Fitness Pal again - they've really up-ed their game! It syncs with my Jawbone and Runkeeper, so all my movements are tracked and it makes adjustments for my activity. Plus, it has this handy equation at the top of the home page:



So I can see how many calories I get for the day, less the food I've eaten (and it's so easy to enter - just scan the barcodes!) + extra calories from working out and then you want to end up in the green.

One thing I don't understand is how it says I get 2,060 calories a day. My two friends who share my diary with are only eating 1,200 a day, so not really sure how that all works out. Anyone know?

So you enter in all your food and track your steps and activity and then you always know how much you have to go.

Anyways, back to my goals - I'm hoping to lose 20 lbs. I know, it's a big goal. It's going to take awhile, I have to stick with it, and I have to be accountable with my friends (that's why I'm glad Jamie and Katie are looking at my diary on My Fitness Pal!) But, then, when I reach my goal, I get this:
Actually there's another one that just came out on Friday, but I can't find it online yet, but if the fitness is going to get real, so is my purse collection :-)

So friends, cheer me on, ask me how I'm doing, help keep me going. After all, bathing suit season is upon us...

fajitas for lunch!

Well, things are looking up eating wise. I think I've gotten past the crazy kill-everyone feelings from a few days ago. I'm settling into the fact that a "treat" means a cup of hot tea. As my bff says, "It's just food, not love, Michelle." She's right! Even though thoughts like this roll through my mind all the time...

Today I am home on a 'cold' day (which stinks because now we're saying so long to our Martin Luther King 3 day weekend and the three day weekend in February in observance of President's day). So, being home for lunch, I actually had some time to make some fajitas!

I made these for some friends over winter break and one said, "I don't even like green peppers - but these are great! What did you do?" Yes, they're that good!



Here's what you'll need:
Pack of boneless chicken
Assortment of Bell Peppers (Or just green ones)
Onion
Garlic
Olive Oil
Lime
Cilantro
Tortillas
Toppings: Salsa, cheese, guac, sour cream...whatever your preference!

Directions

  1. Marinate the chicken (at least) overnight in Italian dressing. This is key - this marinating will make your chicken so tender and juicy! It's actually gotten to the point now where I won't eat chicken at home unless it's been marinated!
  2. On a grill (or on an iron cast stove-top pan) grill all the chicken. Remove it from the grill, let it cool.
  3. Slice onion and peppers - however big or small you'd like it, but definitely in slices.
  4. Put some olive oil, fresh garlic (or the garlic in the jar?) into the pan. Throw the onions and peppers in there. Let those cook for a few minutes.
  5. While those are cooking, slice the chicken.
  6. Throw the chicken in with the veggies and let it get "nice and happy" (as my dad would say).
  7. Juice at least half a lime into the mixture. If it gets too limey, add more garlic. For me, those two kinda cancel one another out.
  8. Throw some cilantro in there if you'd like.
  9. Get your tortillas ready (flour taste better to me, corn more healthy...)
  10. Dish up some fajita mixture into the tortillas and then top with your faves!
Serve with some chips and salsa or rice to complete the meal and a Margarita will make it perfect!

I know that there are a ton of seasoning packs at the grocery store you could buy, but it's so much better when we control the ingredients. I know everything that is in this meal and it's all way healthier than using a packet of seasoning that has a bunch of additives that who knows how it's affecting my body! I've just had this in mind a lot lately as I make food choices - no more "low-fat" stuff to save on calories...what they take out calorie-wise goes back in with chemicals!

Retail Therapy

Today I had to stop at Target on the way home to get some stuff for dinner. And I needed a binder and page protectors for this new intervention I'm doing with a kiddo.

When I checked out, I had spent $97. Please tell me that happens to you, too?

Here's what I bought...

New winter hat (It's pink! With a pom-pom on top!)
2 packs of pencils
2 packs of eraser toppers
Pack of my fave pens
Electric pencil sharpener
New shirt
Food I needed (ground beef, corn tortillas, red enchilada sauce, cheese, onion, salsa)
Bag of Cuties

By the time I got to clothes, I was thinking..."Well, I can skip candy and carbs, because buying all this stuff is actually making me feel better!"


And so I used my Target card and saved $5, because, you know, that makes a dent.

Now...if only I can round up $100 a day for the month of January, and I'll be set!



In other news, I lost my car key (I think outside) on the coldest day of the year. Good news is I have all of tomorrow to look for it. (School was cancelled.) Hopefully someone else hasn't found it and ran off with my coche! Losing your keys is the most annoying waste of time I can think of.

Perhaps this happened to get my mind off of junk food!

Murderous Thoughts

about food. Yes, you heard read that right.

So I'm basically on like day 1 of a month of (as clean as possible) eating. I'm cutting sugars, carbs, and alcohol and really anything that has more than one ingredient. Except one cheat meal each week, but I haven't yet determined on what day that will be happening.

We are starting a Biggest Loser competition this week at work and that's highly motivating, so I want to do good.

Today I've done really well. Here's what I've eaten and drank:

Warm Lemon Water (Read why here.)
Breakfast: Kashi cereal with a 1/2 banana
Got hungry around 10:30 and ate: Cocoa Roasted Almonds
32 oz of water by end of lunch
Lunch: Grilled chicken and steamed broccoli and a Cutie
Got home, apple and peanut butter <--- Was really wanting something like chips and salsa or something worse like those Munchies; settled on an apple instead
Cup of hot tea
Dinner: Salad, microwaved potato, and a hamburger no bun
Almost finished the second 32oz-er of water.

I'm not even hungry, but I'm so pissed that I can't have a glass of wine or any of those mint M&Ms in the secret drawer (that's not so secret) or a bun on my hamburger. I feel like this:


Not even day 1!! Grrr

Anyone who tells you that you can't be addicted to food - they're a fool and I'm the proof. I am - straight up addicted - not lying. (Wish I was.) (Read about it here or #4 here.) I've let food become almost like an extension of my self - that crappy, processed, food - especially miserable junk food! Its addictive and makes us sick and I've got to be undergoing some crazing detoxing or something.

Which - question: Can I even be in detox if I haven't completely given up all sugar and carbs??

But for now, after I finish this blog, I'm going to read, then watch the Bachelor, go to to bed, and get up and repeat this GD process all over again.

One day at a time. That's all I can handle.

PS- Murderous thoughts? I have no idea what that even means - other than I'm angry about not eating what I want. Not planning any murders though. Should I even have posted this?!

Friday Favorites - Seattle!



I begin this blog sitting on the plane home from such a great trip to Seattle...you know when you plan a trip and you leave wishing you had more time? So how I'm feeling right now! I think I'm going to start the Friday Favorites blog with this one since I took so many pics. So, enjoy my visit through my camera's eye!

I arrived on Saturday night. Liz picked me up and we went out for Sushi first thing! One of the rolls we got was the Caterpillar. So good. After that, went across the street to a brewery and had a few ciders and then back to see her place.




Sunday morning we went first to Pike's Place Market - A HUGE market in what I think is downtown Seattle...I'm sure you've heard about it!



Tons of vendors, like this one with fresh fruit - anything you could want! This was just one fruit vendor. There had to be like another ten or fifteen just like it!



And lots of vendors with fresh fish, shrimp, crab, lobster...any kind of sea food you'd like!



We actually didn't get seafood for dinner that night. Instead we stopped at Uli's all-natural, no preservatives sausages...here's the guy telling Liz all about the different kinds.

And the original Starbucks. We didn't get to go in - it was Sunday and the line was so, so long, but cool to be where it was all started!




We also got to see lots of crafts, too. And jewelry. Liz and I got these really simple stacking rings - one with my birthstone and one with hers. Hopefully I'll do better and not lose my sentimental rings anymore...




I also got this little dish. The colors are so pretty and love the message. Still trying to decide if it's going to work or staying home though...





After the market the first day, we came home and made a great dinner together. Nick, Liz's boyfriend was there, and their neighbor, Brent. There's a pic of those two guys later on.

First night dinner: Hot Italian Sausage, Chicken Sausage, and Brats on the grill, grilled corn on the cob, a kale salad, and red wine. Oh, and the best part - Liz made home made bread and then Nick made a garlic-rosemary-olive oil spread to dip it in. It was so, So, SO good...I def ate myself into a food coma!



So mad I didn't take a pic of the bread and EVOO sauce!!

After we lethargically cleaned up dinner, we watched Friday Night Lights. Have you seen that show? It's so good. I think the whole time we got through like five or six episodes. I'm crossing my fingers it's free on my Amazon Prime. (It is! I watched one last night!) : )






Monday - Liz had to go teach. Did you already see my pics on facebook from that? It's amazing to see a great friend doing such a fantastic job teaching preservice teachers. I got a great refresher on all things phonics: CVC words, short vowels, long e, blends, digraphs, diphthongs, r-controlled vowels...I totally took notes and participated with the kids. When I asked them if they loved her as much as I do, the said, "omg. We're learning about digraphs and blends and the time flies. Who would thought it could be so fun? She's awesome!" Anyways, being so passionate about literacy made going to work with her super fun!




After work, we were off to the beach for a few hours of sun. You think of Seattle and think it's always rainy, but the clouds usually burned off around 1, and then we got a few hours of sunshine....





After the beach, we were back at home making another amazing dinner - home made gnoochi! (nee-oh-kee) Love learning about new recipes, and what better place than from my Italian bff? So the dough of gnoochi is potato, flour, and eggs (kinda like a Polish pierogi, right?) They are little dumplings and then you put them in a great marinara...





So much work - Liz did the dough and then Brent and I helped press the little dough balls with a fork after...




Don't get the wrong idea - Liz did most of the work, but she's so gracious she lets me take a pic and make it look like it was me : )




And here's the finished product! Nick did a great job with the sauce!




Lovely dinner with a salad, red wine, and lots of gnoochi. We were so full, but we finished it all. Food coma day #2!

And then we were on to another episode of Friday Night Lights before we went to sleep....



Tuesday Liz didn't have class so we started off at Toulouse Petit for a French breakfast.... The restaurant was gorgeous and it was breakfast happy hour!



We started off with French pressed coffee and beignets....


I had a skillet with crawfish, shrimp, and Andouille sausage in a spicy sauce with egg whites. I'm so proud of myself for trying new things. It was delicious, but spicy and so, So rich...


After breakfast we decided we needed a light salad for dinner! : )

Nick dropped us off at this park for a great view....


and then we walked around some little shops in the Queen Anne neighborhood...


I found these little magnets showing all the things we did (minus the rain, LOVE!)


And we stopped at Theo Chocolate Factory and I picked up this (after like 25 samples...that salad was definitely in order!)




We finally got home, and then got ready for another few hours on the beach. Nick told me that he doesn't want everyone to know what great weather is in Seattle! It was gorgeous. We were actually on the Sound so the water is pretty calm. Then you have a few islands and mountains in the background. The water is ice cold, but the weather was perfect....actually, kind of hot!

After the beach we rushed home, made that salad, and then got ready for the last hurrah - the Space Needle.










That was Tuesday night and then I left Wednesday after I went to class with Liz again. Who would have ever thought phonics would get me so excited?



Well that was it. (I know, longest blog ever!) I had such a great time and realized how much I really, really love to travel. To new places, but to old places too. I think the next trip will be Thanksgiving in Phoenix with Katie, and Jamie and Brian might come in, too : ) Briese - we're making Thanksgiving dinner at your casa!
